Bobotie is South Africa's national dish — spiced curried mince baked with an egg custard topping, served with yellow rice and chutney. It reflects the Cape Malay influence on South African cuisine.

  1. Preheat oven to 180C.
  2. Soak 2 slices of white bread in milk, then squeeze out and mash.
  3. In a large pan, fry onions in oil until soft. Add garlic, curry powder, turmeric, and cook for 2 minutes.
  4. Add minced beef and cook until browned.
  5. Stir in chutney, raisins, soaked bread, vinegar, and salt. Mix well.
  6. Transfer to a baking dish.
  7. Whisk eggs with milk and pour over the meat mixture.
  8. Place bay leaves on top.
  9. Bake for 35-40 minutes until the custard is set and golden.
  10. Serve with yellow rice and banana chutney.
