Kelewele is Ghana's favourite spiced fried plantain — cubed ripe plantain tossed with ginger, chilli, and sometimes nutmeg, then deep-fried until crispy and caramelised. Perfect as a snack or side.

  1. Peel ripe plantains and cut into cubes or chunks.
  2. In a bowl, mix ginger, chilli, salt, and a pinch of nutmeg.
  3. Toss plantain pieces in the spice mixture until well coated.
  4. Heat oil in a deep pan over medium-high heat.
  5. Fry plantain in batches until golden brown and crispy on all sides.
  6. Drain on paper towels.
  7. Serve hot as a snack with roasted peanuts, or as a side dish.
