Akara is a popular West African fried bean cake made from blended black-eyed peas, spices, and onions, then deep-fried until golden and crispy on the outside. It is especially loved in Nigeria, where it’s a common breakfast food and street snack.

  1. In a bowl soak the beans in water for 20 minutes.
  2. Blend the soaked black-eyed peas with onions, scotch bonnet and bell pepper into a smooth paste.
  3. Pour the blended mixture in a bowl, mix the paste with salt, crayfish and seasoning cubes. Whisk until
  4. light and fluffy, this should take about 3 minutes.
  5. Heat oil in a deep pan on medium to high heat. Drop spoonfuls of the batter into the hot oil. Fry in
  6. batches to prevent over crowding.
  7. With a slotted spoon turn the akara to ensure it is golden brown on all sides, this should take about 6
  8. minutes in total.
  9. Transfer the akara onto a plate lined with a paper towel.
