Misir Wot is a comforting Ethiopian red lentil stew, warmly spiced with berbere. It's a staple during fasting periods and beloved by vegetarians worldwide.

  1. Finely dice 2 onions. Cook in a dry pot over medium heat for 15 minutes until golden.
  2. Add oil, then stir in berbere spice and garlic for 2 minutes.
  3. Add tomato paste and cook for 3 minutes.
  4. Add rinsed red lentils and 3 cups water. Stir well.
  5. Bring to a boil, then reduce to a simmer. Cook for 25-30 minutes until lentils are soft and stew is thick.
  6. Season with salt.
  7. Serve over injera.
