Beef suya is a popular Nigerian street food made of thinly sliced beef skewers coated in a bold, spicy peanut-based seasoning and grilled over open flames. It’s especially common in northern Nigeria and is traditionally prepared by Hausa street vendors known as mai suya.

  1. Soak wooden skewers for 30minutes to an hour. This will prevent them from burning.
  2. Thinly slice beef and add In a bowl, mix the suya, oil, salt and seasoning cube. Coat the beef well, cover
  3. and let it marinate in the fridge for at least 1 hour.
  4. Thread the beef onto the skewers, sprinkle with more suya spice and lay on an oven tray.
  5. Cook in a preheated 220C for 20 minutes, flip halfway and cook till done.
  6. Serve with sliced onions, tomatoes and extra suya spice.
